Vegan Red Curry

I am quite literally obsessed with any variation of Thai food, and I'm always on the lookout for incredible products to incorporate into my dishes. When I came across Cha's Organics I couldn't help but be blown away by the variety of products they had available! They have gourmet spices, coconut milks, premium teas and canned tropical fruit. What's so great is they're incredible quality, 100% organic, fair trade, non-gmo, gluten free and vegan!

With my love of always trying new things in the kitchen, their products were the perfect foundation for me to make quite literally anything! One of my favorite dishes yet is my vegan red curry and I am so excited to share it with you all!

Ingredients

Vegan Red Curry
  • 1 tbsp avocado oil
  • 1 onion, peeled and sliced
  • 5 pieces of garlic, peeled and minced
  • 2 carrots, peeled and chopped
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 10 mushrooms, quartered 
  • 2 celery stalks, chopped 
  • 1/4 cauliflower head, broken up into small pieces 
  • Cha's Organics coconut milk
  • Cha's Organics coconut cream
  • 2 tbsp red curry paste
  • 1/4 cup of peanuts, chopped 
  • Fresh parsley or cilantro (whichever you prefer!) 
  • 1 tbsp salt
  • 2 cups of basmati rice
  • 2 1/2 cups of water
Vegan Red Curry Recipe

Directions

  • COOK rice in either a rice cooker or in a pot on the stove
  • HEAT the avocado oil in a large saucepan
  • SAUTEE onions for a few minutes
  • SALT
  • ADD chopped carrots and minced fresh garlic to the saucepan and sautee  
  • ADD cauliflower, and put the lid on the saucepan to allow it to steam for about 5 minutes 
  • ADD peppers, celery, and mushrooms to the saucepan and continue to cook uncovered 
  • MIX red curry paste, coconut milk and coconut cream together in a separate bowl and add to the saucepan
  • PUT rice in a bowl, pour some vegan red curry on top
  • TOP with chopped cilantro or parsley and chopped peanuts
  • ENJOY! 

Recipe Note: Depending on how you cook your rice will depend on how much water you should use. If you use a rice cooker, the water to rice ratio is 1.25:1 or if you use a pot on the stove it will be a 2:1 ratio. You can also use quinoa instead, and that would be delicious too!
