  6. MIX in the flour slowly, while stirring the mixture
  7. COVER the dough and let it rest for 15 minutes.
  8. KNEAD the dough for 5 minutes, adding flour if you need

  10. COVER the dough for 90 minutes, let rise
  11. PUNCH the dough down
  12. COVER the dough again for another 60 minutes, let rise for a second time
  13. DIVIDE the dough into 4 equal parts, and then each of those in half
  14. ROLL each of them out, and tie them loosely into a knot
  15. COVER and let the buns rise once again, for another 30 minutes
  16. PREHEAT the oven to 400 degrees F
  17. BRUSH the buns with the beaten egg mixture and sprinkle with sesame seeds
  18. BAKE for 25 minutes, or until golden brown

Recipe Note: You can adjust this recipe to make a larger loaf, instead of just small buns. Feel free to braid it if you prefer that type of Challah instead. Feel free to include raisins in your dough, you would add these before you let them rise for the first time. You can also add poppy seeds instead of sesame seeds at the end, or za'atar for a savory kick.
