Healthy Peanut Butter Cookies - 2 Ways

If you're like me and you want to indulge AND be healthy, there's no reason why you can't do both! This is the perfect dessert to serve to everyone and both recipes are healthy and delicious!

The base of the first batch is an entire can of chickpeas, and tis completely vegan. I promise, there is no way anyone would guess it's made out of chickpeas! The second batch is made with only four ingredients and is flourless! Please tell me in the comments how they came out, and which one you liked better!! 

Vegan Chickpea Peanut Butter Cookies


Peanut Butter Cookies
  • 1 can of chickpeas
  • ½ cup of peanut butter
  • ¼ cup of maple syrup 
  • 2 tsp of vanilla extract 
  • 1 tsp baking powder 
  • ¼ cup of dairy-free chocolate chips
  • Splash of water
  • Salt to drizzle on top 


  • PREHEAT the oven to 350 degrees F
  • COMBINE chickpeas, peanut butter, maple syrup, vanilla extract, baking powder and water in a food processor, and mix.
  • POUR the cookie mixture into a bowl
  • FOLD in the dairy-free chocolate chips 
  • SPOON cookies onto the baking sheet 
  • BAKE for 15 - 20 minutes

Flourless Peanut Butter Cookies


  • 1 cup of peanut butter
  • 1 cup of coconut sugar
  • 1 egg
  • ¼ cup of chocolate chips


  • PREHEAT the oven to 325 degrees F
  • COMBINE ingredients together in a bowl
  • SPOON cookies onto the baking sheet
  • PLACE your fork flat on each cookie slightly 
  • BAKE for 10-12 minutes

Recipe Note: For both of these recipes it's good to line your baking sheet with parchment paper, and spray with non-stick spray!
